I have my own forgejo and push to both that and github. My work does not have to stop if one or the other is down. Now ofc, I am not a 'heavy' user of Github automation, so for me this is easy. But making sure you at the very minimum have a fully inhouse possibilty of basic manual pushing and pulling from your various dev/test/prod environments when shit hits the fan should be a given for all.
