Cooking with lard IS healthy. There was never any evidence to the contrary. The USDA promoted the low fat diet to sell cheap commodity crops, ultra-processed foods, and alternative vegetable oils. Those things ARE bad for you. The low smoke point of the oils makes them burn and produce carcinogens. These oils also soak into the food, whereas frying in high temperature lard benefits from the leidenfrost affect, causing water in food to vaporize and create a layer of steam that pushes the fat away from the food.

If your biscuits are getting anywhere close to the smoke point of crisco, you are doing something very wrong.
High saturated fat consumption raises ldl cholesterol which does unhealthy things to your body, yes there is more than enough evidence for that.
