What do you find is missing? The main apps I need Google Play for are apps that are tied to a specific company or government service (eg, banking apps, or HMRC). For pretty much all basic functions I think F-Droid does the job.
Store and restaurant apps, discord, streaming apps, most games, payment apps, apps for school, ride-sharing. I tried the "degoogle" way and tossed after two days because that's impossible unless you're willing to adopt a more expensive boomer/millennial lifestyle.
Aside from payment apps, you can (and probably should) just use the web browser for most of those things
