LaTeX used widely for papers, but it does not cover all. PowerPoint is huge, Word is used closer to Markdown’s level for simpler documents (and Pandoc is a huge helper). All administrative staff is using MS Office, that means Excel is used a lot for forms as well. Then there is OneDrive and Teams for collaboration.
