I would give it a shot. Home assistant is full of adapters like this.
I though the CSV export was manual, you can’t automate it.

I assume you can reverse engineer the device API and release the compatible free app with apple health sync (and other connectors).
I’m very reluctant to put any effort in without an official stable API
