In the case of this thread, the OP is protecting themselves from Google tracking by using a de-Googled phone. But they do not seem to care that Google is tracking their spouse.
All of her devices are Apple. She's made the decision she's ok with the tracking, which is her decision alone. I'm not going to force her to give up her entire system just to make me happy.

That's not how marriage works.

Rather, I imagine it would be a bit hard to get them into doing that, given the difficulties it can imply.
