There's plenty of tasty things that don't involve condiments.
It's generally American food that has a lot of mustard, mayonnaise, ketchup, ect. Surprisingly, when I travel I don't need to be as careful. Most other cultures avoid strong flavors / textures like that.
What cultures are you referring to? Mayonnaise and mustard are staples in for example French cuisine, which many consider to be the best food in the world.
