If you want privacy (or anything for that matter), the only way you're going to get it is by user choice. A device that doesn't let you install your own apps is not going to deliver what you want.

If you want privacy (or anything for that matter), the only way you're going to get it is by user choice. A device that doesn't let you install your own apps is not going to deliver what you want.
You can install your own apps on a Samsung Galaxy.
For privacy, I'd recommend hardware with as few blobs as possible and of course an unlocked bootloader.
